Trying to get my roommates to eat gluten-free is like pulling teeth. I’ll ask them to try a cookie or bread that is certified gluten-free and they cringe at the thought.

Usually, I love the samples. Currently, I’m not aware of any gluten sensitivity that I have, but I do know I feel better eating certified gluten-free foods.

A few Saturdays ago, I decided to surprise my roommates with a full breakfast. I also wanted to show them that gluten-free foods can actually be quite tasty. I made thick bacon, over-easy eggs, and gluten-free pancakes (Bob’s Red Mill G.F. Pancake Mix) with Ghirardelli chocolate chips.

I didn’t tell them they were g.f. and they didn’t even ask. They were just happy I was cooking for them. They each had two of the pancakes and said they were “delicious.”

Little did they know, the entire meal was gluten-free! So next time someone states that they don’t like gluten free foods before trying them, make sure to remind them to not judge a book by its cover!

I never thought I would eat gluten free and then I realized all the benefits that come from it. Now, I’m eating gluten-free whenever there is the option and I feel ten times better.
